Strawberry Banana Cream Pie
Since the Tidy Mom is allowing us to enter two pies into her Love The Pie contest I wanted to add this one. This is one of my husband's all time favorite pies. It's just a simple twist on a banana cream pie.
So here is how I make it. Take one already baked pie shell and slice two bananas thinly and put into the crust. Next add 6 strawberries sliced in half. Prepare a large package of vanilla pudding,( cook and serve if you don't make it from scratch), and pour on top of the fruit. Let it chill for a few hours, top with meringue or whip cream and serve. Watch out, you don't want to get in the way of the crowd as they rush in for this one.

Almond Joy Pie
I love a good coconut cream pie but one day as I was eating an Almond Joy candy bar the thought ocurred to me that I could turn this flavor into a pie. So that's what I did. The recipe is very simple. First you need to make one small package of chocolate pudding and one small package of vanilla pudding. I prefer the cook and serve type. (For those of you who know me, yes I usually make the pudding from scratch but I was in a hurry today.)
After your pudding is finished add one cup of flaked coconut and 1/4 cup of slivered almonds into the vanilla pudding.
Mix it in good and put into a baked pie shell.
Slightly toast a 1/4 cup of slivered almonds and reserve for the topping.
Take the finished chocolate pudding and pour on top of your coconut cream base. Take it slow so it doesn't overflow. If you have extra just feed it to you kids.
Allow the pie to cool in the fridge for a couple of hours. When it has cooled you can either make a meringue to top it or add cool whip. Decorate with a few sprinkles of coconut and the almonds that you set aside earlier. Enjoy!
Almond Joy Pie and it doesn't get much easier than that!

Sandy
Sandy probably won't be a name that people will be naming their daughters for awhile. Hurricane Sandy has created large scale devastation on the east coast and a week later people are still without power and basic necessities. I agree with my daughter that people who could should have evacuated. But I also realize that many people couldn't evacuate. Many didn't have anywhere to go. And logistically, can you imagine where to put all those people if they did evacuate? Mind boggling.
But I do have pity on those who lost so much. And I am praying that they will soon have services restored and can start putting their lives back together.

Child Dedication
This weekend we got to go spend the weekend with two of our children. Our daughter and her husband are the couple on the left and they are holding two very precious little girls, my granddaughters. This was the day of their child dedication. I consider myself very blessed to not only have a daughter who takes her job as training her children very seriously but also to be able to attend this special day.
We also got to spend some time with our son. It's always just too short.
I miss these grown up kids, but I'm very proud of them also.
